And so there I was in moroccan desert tent after a nostalgic sunset, between crops of wheat in the most western part of the country. The grass around filled with nomads who gather with their vans from the vast corners of the land.

In the red and green tent there were stuffed animals, owls, ducks, ferrets, foxes, pheasants wrapped in christmas lights. There were men and women who knew friendship, pleasure and loss, gathered in front of a blasting soundsystem, on a quest for freedom for one weekend.

As the beat hits hard and the melodies blend hypnotically the crowd is moving as a whole, the heat is rising, it becomes ritual, we become tribal. We were so remote that no neighbours could have heard what happened that night. I knew I would feel nostalgia on the way home...

Réaliser le roux dans une casserole : mettre le beurre à fondre, puis ajouter la farine et mélanger à l'aide d'une spatule. Laisser cuire à feu doux pendant quelques minutes, sans coloration.

Toujours sur un feu moyen, verser progressivement le lait froid et mélanger régulièrement avec un fouet. Laisser cuire à ébullition pendant 5 min.

Assaisonner ensuite la béchamel de sel, de poivre du moulin et de noix de muscade.
