APPLE CINNAMON PANCAKES

noun
a thin, flat cake of batter, usually fried and turned in a pan. Pancakes are usually eaten with syrup or rolled up with a filling.

Prep Time: 10 Minutes
Cook Time: 3-5 minutes per side


1/2 cup Brown or White Rice Flour
1/2 cup Rolled Oats
1 teaspoon Baking Powder
Pinch of Salt
1/2 teaspoon of Cinnamon
1/2 of an Apple diced to desired size
1 beaten Egg
1/2 cups of Milk or Milk Substitute
1 teaspoon Maple Syrup
2-4 tablespoons Coconut Oil


Steps:
1. Put the rice flour, baking powder, salt, and cinnamon in a mixing bowl and blend with a fork or whisk.
2. Add the apples and coat with the pancake mix.
3. Pour in the egg, milk, and maple syrup.
4. Mix by folding from the bottom up with a spoon or silicone spatula being sure not to over mix, it's better if there's even some small dry clumps left.
5. Scoop around 2 heaping spoonfuls or half a cup of the batter into a VERY well oiled pan on medium to medium-high heat and cook for about 3 minutes a side.
