Poem:

Because the chilli pan mee
was luscious -
I mean, fresh, unsoggy, chewy noodles underneath
then, minced fried crispy garlic,
juicy, savoury, rolly bits of minced pork,
crispy, crunchy ikan bilis that taste of the sea,
a single poached egg, whites softly cooked and –
a wobby, yellow centre - when pierced, oozes delicately down into the tangled noodles
(oh, wait I’m not nearly done yet).
The thinly-sliced green onion, fragrant and alive with juice.
So this is the chilli pan mee,
which comes with a side of long-boiled broth -
floating on it, eggy bits
and dewy, green-sweet leaves.
You try to mix the noodles up,
and the strands get stuck together:
so you add a little broth…
and you're winning.

The first bite is -
(in a word)
comfort,
like a kiss where someone's holding both your cheeks in their warm hands and breathing you in,
and the rest of the meal is hands-in-hair I'm-not-going-to-stop-till-i've-shown-you-what-I-mean.
I mean, usually, with wheat-noodles
I feel meh and stodgy,
but not with this stuff.

At this point,
it's warm
and really beautiful,
innocent
and complete:
the yolk has seeped into the web of noodles
and it is becoming one (as gently as you need it to).
This is when you know you can take it up a notch.

I mean, she wants it.
So, the chilli
is in this plastic bowl in front of you,
and you casually dump three spoonfuls into your noodles,
and you try, you try to mix this in
so that every inch of her is completely covered in the sweet, tangy, studdedly-spicy crimson stuff -
but no.
The yolk has done its work and jammed things up.
So, the broth -
it is no longer steaming,
but it is not yet sad:
the green floating leaves still smile up at you,
and this is when you dip your lovingly-crusted chopsticks into the cloudy pale liquid
and free the green leaves from their dreamy dance,
scattering them onto the noodles
who wake up,
droolingly,
as if from sleep.
Because the leaves have brought with them sighs of the broth that have kept them warm for you –

And now. Now you can fold everything together,
and the scent of the fruity chilli hits you, and
you just know,
you just know you have got to taste it,
(not that you're done with it yet).
Besides, there's more green in there now so the noodles are relaxed,
as though they have found the loves of their lives and nothing could ever harm them.

So you try it,
and you know –
you sigh –
and you scatter more chilli over the noodles, as you unravel them layer by layer –
and when you reach the bottom of the bowl,
there are telltale signs that the noodles lived long, beautiful lives there,
and died with the leaves, in bed, very much together, not one after the other:
without heartbreak –
and you scoop what's left of it into your mouth, swallowing with peaceful finality -
as your eyes shift to the chinese tea,
and you lay the bowl to rest,
quietly sipping on the icy cold,
thanking the gods for a meal that got you real, real good.
