The Districts - Stay Open

The guests arrived in silence, shades and jets
Black cars and gloves and private debts
The sommelier awaits, the fridges hum
The chef has summoned them to... come

Tonight’s the night, for those who dare
A gentle breeze, a touch so fair
Each course the sin, for which they pay
Reserved for hunters and their prey

To start, a medallion of veal
poached in champagne, glazed with eel
A flake of salt, a drop of lime —
That's the kind of stuff that kings would dine

Then came a terrine of goose and gold
with truffle threads and butter cold
A fig reduction, black as their souls —
How they ached to spoon those delicate bowls

And then ...
There was just one more dish:
Raw kobe beef and fugu fish
The men devoured the tiny piece of art
Lusting for the main course to finally ... start

And there it was:
Prepared with utmost finesse
Sparsely seasoned and barely dressed
The skin was soft
The meat was ripe
Carefully laced
And underaged to taste
