Donny‘s Schnitzel mit dunkler Soße & Klöpsen 

This dish by the our new guest-chef Donny Dunkel is a masterpiece of traditional German craftsmanship. Find him here: @dunkel-d

Since generations this recipe has been kept a secret, but now we give you a little taste of it. 

First of all it is very important to hit the meat in the proper rhythm, which soon feels like the beginning of a proper beat. After the first claps you realize this is simply what's needed to ensure the special texture and the perfect thickness of our main ingredient. 

This artisan delicacy is then covered in a fine fried crust of well chosen crunchy seeds - rounding up the perfect texture. 
Besides that you have the famous Schwarz’schen Klöpse. Donny's grandmother herself showed him how to roll these Klöpse so they get the right groove and shape. 

To round it all up - the entire atmosphere of this dish is added by the  composition of this especially “dunkle” sauce. It is the most challenging part of the dish. The complexity lies in the combination of all the fine aromas but Donny combines them to a thoughtful symphony that holds this entire plate together.

Als er aufstand, um sich eine frische Spezi aus der Kühlbox zu ergattern, stolperte er über eine Teppichfalte und verschwand in der Spalte zwischen den Dielen. Und das Abenteuer begann.
