Na verdade, um coco não é uma noz, mas uma drupa do coqueiro, cujo mesocarpo (a polpa) não é carnudo, mas fibroso. Dentro está o endocarpo duro, que circunda a semente com três aberturas de germe claramente visíveis. Durante a germinação, o germe sai por uma dessas aberturas. As três aberturas de germinação são os restos do fruto, que originalmente consistia em três carpelos.

A semente do coqueiro é monocotiledônea e, portanto, possui um único lóbulo de semente que fornece o transporte do alimento de reserva até a planta em germinação. O alimento de reserva na semente é o branco do germe, que possui uma cor branca e uma estrutura fibrosa gordurosa. Esse é o coco que se comercializa como farinha de coco, entre outras coisas. Há também o germe líquido branco, água de coco ou água cristalina, um líquido semi-turvo. Em uma fruta totalmente madura, todo o branco do germe consiste em um branco fibroso do germe.
