Here's the quick and dirty calibration procedure: 

0) Black probe to ground, red probe to output. 
1) Set the OFFSET so that the output reads 0.000V, within a millivolt or two. 
2) Set GLIDE to full-CCW and LEVEL to max. (Full CW) 
3) Find a 5V offset source and measure it - for example it may be 4.96V.
