Frank K Ackar is a Senior Research Assistant in the Crop Science Department at the School of Agriculture, University of Cape Coast.
He talks about this research poster produced by colleague Ester Jan which features the 7 varieties of sweet potato located in Ghana. Ester wanted to evaluate different potato types in terms of the yield and consumer preferences including ‘Apomoden’ which is the local name for Orange Fleshed Sweet Potato.
Esters findings included a lot on dry matter content. Farmers choose the dry varieties to grow based on how firm the potato is once cooked and the flavor of the potato rather than choosing to grow a potato for the nutrients. The community needs more education on the importance of Apomoden and people need to learn how to cook the OFSP for less time. Frank recommends the local dish Potong Potong, which is made from mashed sweet potato with added sauces; it is mashed whilst it is being cooked. For this dish the fast time it takes for cooking is a plus. Frank says, more research should go into ways to cook it, when nutritionists come up with ways to cook it will be more attractive to the farmers. How are people going to cook and prepare it? What kind of dish are they going to prepare? Then this will hopefully be the new variety that farmers will grow and consumers will eat. We have to find a way to convince farmers to grow it.
