Music by Angelo Badalamenti, rest in peace.  Apparently he said "In the ruckus of beer mats flying through the air at The Roadhouse, we have Julee singing a beautiful slow tempo song.  You would never have that kind of song in a place like that"  He refers also to the contrast setting the tone for the show.
