This is my version of Franz Schubert's Symphony #5, rendered with virtual instruments from the original score.

I start by using Sibelius to input the notes for each part.  Once I have the "raw data" for each instruments' part, I export it as MIDI data over to Cakewalk Sonar where I do everything else.

Using virtual instruments created by EastWest/Quantum Leap I am able to massage the MIDI data for each instrument to create realistic-sounding performances for each part.  This starts by adding the dynamics, tempo variations and other directions from the score.  I then choose the proper articulations for each note - the legatos, staccatos and such, to try to make it all sound something like Schubert intended.

This is also where I add the human touch by making small changes to timings and velocities, often note-by-note, to get the most realistic sounding performance I can.  Time consuming, yes, but this is what really helps make the results more realistic. 

Next comes the "recording session" where I render each instrument part down to its own audio track.  Now, instead of working with MIDI data, I'm working with audio tracks which can be treated as if they were from a traditional recording session.

The mixing stage is where it all (hopefully) comes together into a pleasing, realistic-sounding performance.  Once I'm happy with the mix, it finally gets polished with a little mastering to sound something like this.
