Everyman is a vessel for Gaster, who cannot accompany you on the adventure, due to his frail state, and his frank cowardice.

Everyman has a mind of it's own.
But because of Gaster forcefully using him as a Vessel, his mind and personality are very crushed down .
Only coming out very rarely.
Probably once or twice in the course of the game.

He'd speak in the third person, like the tree man.
It IS also the man behind the tree.
Hence the eggs, and bird symbolism.
