The assignment for the Pair Test was: “Research local cuisine and its history, and consider how it can be applied in modern times.”

“Let’s start by researching the local dishes from our hometown.”

After school, the two headed to the local library. They searched for books that summarized the history and background of regional cuisine while looking into dishes passed down in their area.

“In our region, dishes like Kenchin-jiru and Gohei-mochi seem to be famous. They’ve been around since the Edo period.”

“Gohei-mochi, huh. I remember eating it at festivals when I was little. But why is Kenchin-jiru called ‘Kenchin’?”

“That’s because it originated in a Zen temple. It comes from Kencho-ji, a temple, and was part of Buddhist vegetarian cuisine.”

“I see. So that’s why it doesn’t use meat. Thinking about it, people back then really valued food.”

“There are so many ways to avoid waste, and using seasonal vegetables is wonderful. Hey, why don’t we actually try making it?”

“Make it? That sounds fun.”

On the weekend, the two stood in the kitchen. With the recipe in hand, Kanon took the lead while Haruto chopped and mixed the ingredients.

“Is this size okay for the daikon?”
“Yeah, that’s just right. Haruto, you’re actually pretty good at cooking.”

“I used to make fried rice all the time. But Kenchin-jiru is surprisingly easy.”

“Yeah. The key is to bring out the natural flavor of the ingredients.” Kanon closed the lid of the pot. “Next, let’s make Gohei-mochi. You just mash the cooked rice and add a sweet-savory sauce—it looks simple.”

When the dishes were finished, the two looked satisfied. Steam rose from the Kenchin-jiru, and the savory aroma of Gohei-mochi filled the room.

“Doesn’t look bad.” Haruto took a bite of the Gohei-mochi. “Wow, this is really good!”

“Recipes created long ago are simple, but they have such deep flavors.”

The day of the Pair Test

“Local cuisine contains the climate and history of its region. For example, Kenchin-jiru began as temple cuisine, but today it’s being reevaluated as a healthy dish that makes good use of vegetables without waste.”

“Gohei-mochi is similar. It originated as preserved food in mountain areas, but now it’s loved at festivals and tourist spots. By actually making these dishes ourselves, we experienced the ingenuity of using ingredients wisely and touched the wisdom of people in the past.”

“Local cuisine is not just tradition—it’s a treasure trove of knowledge that can enrich our modern lives. We hope more people will enjoy it in the future.”

On the way home, walking past pampas grass swaying in the autumn wind, the two talked.
“Cooking local dishes together felt strangely nostalgic.”

Their laughter melted into the evening sky. Through the flavors of their hometown, they felt a mysterious connection between past and future.
