It's because that since the notes are arranged in such a way (likely from converting all sound fonts from the original song to Piano) that your brain recognizes the notes and assembles the song based on memory. Then again, it only works if you've heard the original song enough times that you would be able to recognize it.

If you change the sound to synth voice or something it sounds like a synth voice singing it.
