SWEET POTATO BANANA BROWNIES

Prep Time: 1 hour
Cook Time: 40 minutes


Ingredients:
1 cup Mashed Sweet Potato
1/2 cup Nut or Seed Butter
1/4 cup and a bit of Cocoa Powder
1 ripe diced Banana
2 tablespoons Maple Syrup
2 tablespoons Hemp Seeds
2 tablespoons Cocoa Nibs



Steps:
1. Set oven to 350F, cut air holes in sweet potato skin and bake for about 50 minutes. You can also boil the potato to get it mashable but baking it in the oven on the same side for the whole 50 minutes makes the one side all caramelized.

2. Mash the sweet potato, banana, and cocoa powder together, and then mix in the butter, maple syrup, seeds and nibs.

3. Pour batter into a greased glass dish, smooth out, and cook in the oven at 350F for like 35-45 minutes (shorter for softer brownies, longer for a crispier outside).
