I just recently finished the Balance arc of The Adventure Zone and I LOVED it! And since Griffin didn't make themes for the PCs, I decided to do one myself! I may do a few other characters as well (eventually). If I had to choose one to do next, I'd say either Lup, or Aubrey from the Amnesty arc.
