Undyne is the head scientist of the underground, and worked with Papyrus and Alphys to help create machines and puzzles intended to trap any Humans unfortunate enough to fall down. She has always been fascinated with the effects that DETERMINATION has on Monsters, witnessing how it strengthened both their resolve and physical toughness. However, this curiosity was punished severely when the experiments inevitably went sour... She was lucky to have only taken a small dose herself, as only part of her face was lost (leading to the robotic replacement she has today).
