There is a legend that the famous merchant and traveler Marco Polo introduced ice cream to Europeans after his trip to China in the 14th century. However, Food in History author Reay Tannahill warns against believing this. According to her, the famous gelato was invented by the architect and designer Bernardo Buontalenti in the 1500s. It contained starch, a special cream, and eggs.
Its spread to the rest of Europe, starting in France, is attributed to the wife of the Duke of Orléans, Catherine de' Medici. The recipe, however, has changed a lot.
