Pour faire un bon croissant il faut de préférence un beurre hydraté à 14% (contrairement à 16% pour un beurre traditionnel), ça permet au laminage de se faire plus distinctement sans que les couches se mélangent, ce qui va donner un feuilletage régulier et délicat!
