Mehlschwitze, auch Einbrenne, Schwitzmehl oder aus dem Französischen Roux genannt, ist eine Mischung aus Mehl und Fett. Das Fett wird erhitzt und Mehl darin eingerührt und angeschwitzt. Mehlschwitze kannst du als Grundlage für verschieden Saucen verwenden, aber auch zum Eindicken von Suppen oder Eintöpfen. Je nachdem, was du kochst, kannst du eine helle, eine blonde und eine dunkle Mehlschwitze machen. Wie du die verschiedenen Mehlschwitzen machst, erfährst du weiter unten in unserer Schritt-für-Schritt Anleitung.
