After the unfortunate events that led to Undyne and Alphys’ divorce, Undyne retreated to the old ruins. Over time, she’d transform these ruins into a sanctuary for the various aquatic(-based) monsters. Ever since, she has only encountered one human, who may or may not have tried to murder her (albeit in self-defense). 

Throughout the time Undyne escorts Oliver through the Sanctuary, she puts them through a small series of physical tests as well, such as running laps or suplexing boulders (or some slightly-smaller-than-that rocks), just because they can.
