I know it’s canon that he dodges in this fight, but I like to imagine that because of his own LV he has enough HP for LOVE 1 attacks to hurt him but not a lot.

In this instance, 'canon' refers to the version on Tumblr, created by the infinitely talented Fella. They don't actually consider it canon, but for Furtherfell it most certainly is. - Finally head to Wastefall, the garbage dump of this world, if you'd like a little bloodshed in your life. The Overseer's gladiatorial arena is the perfect location for you to get your LV rising and your hands adequately dusty.
So whether it be Drama, Romance or Bloodshed that you seek, MTT has you covered.

In this branch, Sans takes on a somewhat original role. Having first appeared at Grillby's, he now fills the position of Overseer of Mettaton's Colosseum. By now it has become pretty clear he is a man of many personas; first you saw him drunk and overbearing, and then you saw him as sober, downtrodden and clearly not enjoying his job.
Unfortunately, the latter was a rather blatant façade.
Sans loves his job! As a skeleton with a hell of a lot of built up rage towards the system, why wouldn't he enjoy the brutality of it all? In fact, the most frustrating thing to him is Hare's sheer dominance over the Colosseum, whether that be through slaughter or pacifism.
And so he drops the façade. If he has to tackle the human head-on, he's at least going to have as much fun with it as his audience are.

It says here FURTHERFELL is a SERIES of AUs, what are its variations?

FURTHERFELL has several variations to represent the different neutral outcomes which UNDERTALE (and therefore UNDERFELL) can have. We do not have all of the hypothetical variations possible out as branches, since that would take too much work, so we only have Incomplete Pacifist (Rethroned) King Mettaton (Drama! Romance! Bloodshed!), King Papyrus (Vive La Révolution), and.. That one doesn't exist. Also there's a self insert.

How do neutral endings work? Are you using the Trust, Betrayal, and Closure system? 
FURTHERFELL does follow the Canonfell system of neutral endings, which is explained here.

Frisk's actions did follow the Trust, Closure and Betrayal system. But with a twist we won't reveal yet.
