Marinade:
1/4 cup / 65 ml lime juice
1/4 cup / 65 ml orange juice (Note 1 for subs)

2 garlic cloves , minced
1 tsp cumin powder
1 tsp salt

Fajitas:
▢700g / 1.2 lb skinless chicken thighs or 2 large chicken breasts , halved horizontally (Note 2)

▢3 capsicums / bell peppers , deseeded and sliced (red, yellow or green)
▢1 large onion , halved and sliced thickly (brown, yellow, white or red)
To Serve:
▢8– 12 small tortillas
▢1 large avocado , halved and sliced
▢Sour cream
▢Fresh lime wedges

Heat 1 tbsp oil in a heavy based skillet over high heat until smoking. Add vegetables to cover the base of the pan in a single layer without too much overlapping (I cook in 3 batches). Spread out, leave for 45 seconds (to char it).
Toss quickly then spread out. Sprinkle with salt and pepper. Leave 45 seconds, toss then spread out, then leave 45 seconds. Remove onto platter and repeat with remaining Vegetables.
Chicken:
Heat 1 tbsp oil in a large skillet over medium high heat. Add chicken and cook for 3 to 4 minutes until caramelised. Turn and cook the other side for 3 – 4 minutes.
Remove onto a plate, cover loosely with foil. Rest for 3 minutes then slice.
To Serve:
Warm tortillas using chosen method.
Pile peppers and onion onto tortilla. Top with chicken, drizzle with sour cream, squeeze over lime juice. Fold, devour and be happy.

Grate the zucchini and carrot using a standard box grater,
Mix all the rissole ingredients together in a bowl using a wooden spoon.
Scoop up just shy of 1/4 cup of mixture. TIP: An ice cream scoop with a lever is super handy for making patties and meatballs!
Wet your hand with water (so the mixture doesn’t stick) and place the ball of mixture on your hand.
Shape it into a patty.
Cook 5 to 6 patties at a time in a non-stick pan for 3 to 4 minutes on each side until golden and crispy. Keep cooked rissoles warm in a low oven, sitting on a rack set over a tray (this stops the underside from going soggy).
And that’s it! Pile them up on a platter with ketchup on the side for dipping. Rissoles are normally a meal eaten with knife and fork, but they’re also delicious as finger food. Either way, get your people stuck in while they’re hot!!

Vegetable oil – We’ll be using this to saute the onion and rice. You can use any type of oil that you have handy.
Onion – I used a large onion because this recipe makes a lot of cabbage rolls. Every bite should have a little bit of onion in it!
Long grain rice – I prefer Jasmine or Basmati rice. I wouldn’t use brown rice as it takes a lot longer to cook than white rice and you may end up with crunchy bits in your rolls.
Ground pork – I love to use pork because it has a higher fat content and makes for some nice juicy rolls. You can use any type of ground meat you like, but keep in mind that leaner meats like chicken or turkey will come out drier. You can even combine meats, for example half pork and half beef.
Fresh parsley and dill – Using fresh herbs makes such a big difference in how the flavor develops in your rolls!
Salt and pepper – Season the mixture to your own discretion but be careful with the rolls because the sour cabbage is quite salty.
Sour cabbage leaves – This is what really sets the Romanian version apart from the rest. The little hit of vinegar is to die for! Sour cabbage is basically fermented cabbage, same as sauerkraut but it’s sold as whole cabbage instead of chopped.
Bacon – Find yourself a nice thick-cut smoky style of bacon.
Tomato juice – This is what our rolls are going to sit and cook in.

In a saucepan, add Kikkoman teriyaki sauce, (1/2 cup) sugar, and starch. Heat the sauce over medium high heat until thickened.
Adjust sweetness as desired. (If you prefer saltier, leave as is. For a sweeter sauce, add 1/4 cup of sugar.)

Preheat the oven to 400°F. Spread the teriyaki sauce over a prepared pizza crust. (you can use a cooked homemade crust, if you'd like.)

Sprinkle shredded mozzarella cheese over the sauce. Add the onions and mushrooms on top.
Crumble the canned mackerel and top with green onions and more cheese.

Bake the pizza in the oven at 400°F for 15-20 minutes, or until golden brown.

Marinate the fish pieces and fry them in mustard oil.
De-Bone the fishes and shred it and keep in a big mixing bowl.
Fry the red whole chilli and crush it and put it in the bowl along with the fish.
Fry the chopped ginger & garlic and put in the same bowl.
Take the sliced onion and put in the bowl.
Add the fresh coriander to it also.
Lastly add 2 tablespoon of mustard oil and give all the ingredients a good mash with your hands.
Add salt and if required another teaspoon of mustard oil can be added to the bharta.
Then serve it with piping hot rice 🍚

For fried honey buns, you can place the slices of dough on a greased parchment-lined baking sheet about ½-inch apart. Cover them with plastic wrap and let them rise for about 30 minutes in a warm place.

While the slices are rising, heat 3 cups of vegetable oil or oil of your preference in a large saucepan to 320 degrees. Use a  to check the temperature. You'll also want to mix up your glaze so it's ready for you.

There are two ways you can add these honey buns to the oil. You can cut the parchment paper into squares around each bun and carefully drop the honey buns in that way or if you greased your parchment paper as I suggested, you can carefully pick them up and place them in the oil.

I fried them one at a time so that the temperature of the oil didn't drop. This is very time consuming but I had golden fried honey bun every time! Once one side is a golden color, flip and let the other side fry until golden.

Place the fried buns on a paper towel lined plate. Let them cool for about 10 minutes and dip them while they're still warm in the glaze. Let any excess glaze drip off and place on a piece of wax paper to dry.
