This flavorful recipe for Kung Pao Noodles can be made with chicken, shrimp, tofu or my very favorite….roasted cauliflower! A few years back, while visiting China, Brian and I took a couple wok cooking classes and got a feel for authentic Kung Pao which is the perfect balance between spicy, tangy, sweet and umami flavors. This is my own simplified version that I like to serve with noodles instead of traditional rice. Keep it vegetarian or add meat — it’s up to you.

This week for this 116th episode is Wayne Regan aka Blutung a native of Sydney, Australia who was inﬂuenced by music at a very early age...always improvising with any object that would make rhythm, or an interesting sound.

Passionate, but as some might say obsessed, he began collecting vinyl records as soon as he could buy them and, after studying theory at the Sydney Conservatorium of Music, began producing his own electronic music, and collaborating with various other musicians.

Drawing on many inﬂuences, particularly those of the 80s and 90s, he began experimenting with synthesisers and drum machines, producing various forms of electronic music; from industrial, ambient techno to drum & bass, trip hop and nu jazz, as well as soundscapes for vision.

Around the same time, he also commenced a role with one of Sydney's leading music radio stations... a mainstream journey, into a parallel universe, that spanned over two decades, which expanded his knowledge of contemporary music, and where he learnt his craft for mixing - adhering to a simple philosophy of "best tracks and seamless segues".

Not restricted to any one genre he continues to produce a diverse range of original music, which is consistent with his various weekly radio shows.

While best known for his Techno sets, he is equally at home mixing Tech House, Bass & Soul and Psy Trance. An eclectic interest which, undoubtedly, has conspired to inﬂuence his unique style of Techno music today. Please enjoy this journey into Progressive, Psychedelic Techno...
