A long, cold and snowy winter is finally coming to an end. Just after dawn during a nocturnal unattended sound recording in an old forest. Black grouse is on the leks, and the voices of overflying Whooper swans can be heard. Chaffinches are migrating, and the local Willow tits have begun singing. Black and Great Spotted woodpeckers are drumming, but Ravens steal she show acoustically. Feels good to be alive.

ตามมาด้วยเรื่องราวมากมายที่อธิบายคำตอบได้เป็นอย่างดี จนหนังสือเล่มนี้กลายเป็นที่ยอมรับในระดับโลก เป็นหนังสือที่ถูกแนะนำโดยบุคคลสำคัญหลายท่าน ถึงขั้นว่าในรอบ 10 ปีมีคนเคยกล่าวว่านี่คือหนังสือที่ดีที่สุดเล่มหนึ่ง และมนุษย์ทุกคนควรได้อ่านสักครั้ง

Mon invité du jour est Apollonia Poilâne, dirigeante de la célèbre maison éponyme. Vous pourrez retrouver Poilâne sur presque tous les réseaux sociaux et notamment Instagram. Concernant Apollonia elle est essentiellement présente sur LinkedIn. 

Pour tout vous dire Apollonia et moi on se connaît depuis qu’on est toutes petites. Mais bizarrement, la vie a fait qu’on se connaissait sans jamais vraiment se connaître et c’est en grande partie pour cela que j’étais impatiente d’enregistrer cet épisode avec elle. 

Apollonia a un parcours qui rend humble : à 18 ans ses deux parents décèdent accidentellement. Elle se retrouve à prendre la tête de la Maison familiale – qui emploie plus de 100 personnes – pour faire suite à la direction de son père Lionel. 

Dans cet épisode, elle nous parlera bien sûr du moment où elle est devenue chef d’entreprise, mais aussi de sa passion pour son métier, elle qui se décrit comme « boulangère et chef d’entreprise« , de la difficulté de trouver un équilibre entre innovation et respect des savoir-faire, ou encore de la différence entre grandir et grossir, c’est à dire, la tension entre artisanat et développement. 

Durant l’épisode vous verrez que nous avons été interrompues par une arrivée impromptue de biscuits ou celle de son petit chien Rascal, et j’ai voulu garder ça pour vous montrer la vraie vie d’Apollonia. 

Enfin pour terminer, on évoque à la fin de l’épisode son tout nouvel ouvrage qui vous expliquera notamment comment réaliser un pain Poilâne de chez vous 😉
