Onion Tacos

Chips and Cheese (Microwave Method)

Ingredients:

1 generous dumping of salted tortilla chips (or off-brand Doritos if you are feeling rich)

4/5 to 4/3 cup shredded cheese (any type; cheddar, sharp or mild, orange-shredded blend)

Instructions:

Place tortilla chips in a single layer on the glass microwave turntable plate. (Yes, the one that comes with the microwave—it works better than any Dixie plate.)

Evenly dump shredded cheese over the chips, being careful not to mound the cheese too thickly. When mounds appear, carefully arrange them onto chips that can support the weight.

Microwave on high for 32–36 seconds, or until the cheese just begins to bubble—the little bubbles, not the angry ones.

Using a rag or folded-up coffee filter, remove the plate from the microwave. Serve immediately, with a side of chilled Baja or Code Red.

Serves: 1
