Alois Winery is located in Pontelatone, in the province of Caserta, Campania, Italy. Specifically, it is situated in the lower valley of the Volturno River, with vineyards at the western end of the Pontelatone Valley. The farm itself, a restored farmhouse dating back to the early 1800s. Cantine Alois, also known as Vini Alois, is famous for its revival of ancient, nearly lost Italian grape varieties, particularly Casavecchia and Pallagrello (both Nero and Bianco). 

The winery is also known for its silk-making history, with the Alois family's silk fabrics once adorning famous locations like the White House and Louvre Museum. Massimo is the son of Michele Alois, who originally established the winery and began the revival of ancient, indigenous grape varieties. Massimo has continued his father's work, focusing on research and production, particularly in identifying the best vineyard sites for these unique grapes.

Professor Attilio Scienza is the one who checks all the facts and regulates when we mistakenly type “Verdicchio” instead of “Vermentino.” He is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. 

He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. As the author of over 350 publications on vine and viticulture in national and international journals, you can bet he knows his stuff!

Castello di Ama winery is located in Gaiole in Chianti, in the heart of the Chianti Classico region of Tuscany about 12 miles northeast of Siena. More specifically, the winery is located in the small village of Ama, which dates back to the 12th century. The winery is known for producing wines of great finesse and quality, particularly its single-vineyard Gran Selezione red wines. In addition to its wines, Castello di Ama is also recognized for its contemporary art collection.The winery is also recognized for its commitment to sustainable viticulture, modern winemaking techniques, and integration of contemporary art within the estate. 

The founding of Castello di Ama dates back to 1976, when four families originally from Rome set out to restore the prestigious wine estate to its previous splendor. Lorenza Sebasti, daughter of one of the founding partners, joined the organization in 1988, and has since risen to the role of CEO.

She is the Italian wine reviewer and a columnist for Club Oenologique, wine editor for Asia Tatler, a host of the television series Wine Masters, and co-designer of the award-winning Elements Collection of crystal stemware with Lucaris.

Her educational video series has reached over 10 million students, and she is regularly invited to speak on Italian fine wine, Champagne, wine investment, and collecting. He is the former Director of Education and Education chair for the Court of Master Sommeliers, Americas, and an instructor for the Napa Valley Wine Academy. Over his 30-plus year career, Tim has taught thousands of students in wines and spirits classes at every level as well as developing wine education programs for restaurants, winery schools and wine distributors. He has experience in all phases of the wine industry: online, wholesale, retail, winery, and restaurants.

Tim has written for a number of publications including Fine Cooking Magazine and the Somm Journal and also writes for numerous wine and spirits clients. He has served as the author and lead judge for the Best Young Sommelier Competition and the Top Somm Competition. Prior to developing his wine expertise, Tim received an M.A. in Classical Music. He played classical trumpet as a freelance professional and as an extra with the San Francisco Opera Orchestra. He currently lives with his family in New Mexico.

Maria Boumpa is an accomplished and dynamic F&B professional specializing in wine and spirits, with over 12 years of hospitality experience across the UK, Greece, and Denmark, including roles in luxury hotels and Michelin-starred restaurants. She currently serves as Wine Director and Restaurant Manager at the two Michelin-starred Da Terra Restaurant in London. Maria is pursuing the WSET Diploma in Wines and has already achieved the Court of Master Sommeliers Advanced Certificate with top honours, aiming to become a Master Sommelier. 

In 2024, she placed third in the UK Sommelier of the Year competition by IWSC, was runner-up in the UK Ruinart Sommelier Challenge, won the Innovation Award for pioneering low and non-alcoholic drinks, ranked 21st among UK sommeliers, and was named among the Top 5 Female Sommeliers in the UK by the Top 100 Sommeliers UK. In 2025, she was named UK Sommelier of the Year by IWSC, ranked second among UK sommeliers, maintained her position in the Top 5 Female Sommeliers list, and achieved the prestigious ASI Diploma Gold.

More about today’s guest:  

Il Sorpasso is a small winery in Carema, a tiny appellation at the northwestern edge of Piemonte bordering Valle d’Aosta. Founded in 2012 by Vittorio Garda and Martina Ghirardo, the project began with the rental of their first vineyard. Vittorio’s passion for wine began at 16 and has shaped his entire life. With a degree in viticulture and enology and experience in several wineries, he launched Sorpasso in 2014. His vision is simple yet resolute: to continue crafting wines that honor the unique terroir of Carema, with no plans for anything else.

Carema’s cultivable areas are scarce, carved directly from the mountains between 300 and 700 meters in altitude. The small terraces require all vineyard work to be done entirely by hand—tending the vines here is as much an adventure as it is a labor of love. Farming organically, Vittorio and Martina focus on native grapes such as Picotendro (a local variety of Nebbiolo), Neretto, and Ner d’Ala. Through dedication and perseverance, they’ve grown from a single plot to one hectare of vines—no small feat considering the entire Carema DOC covers just 13 hectares.
