Always with Yew is a storytelling podcast about food, memory, and women’s lives.
In this episode, Grace — a southern Chinese student in Sydney — shares her journey through body image, healing, and homemade dumplings with water chestnuts.
Through taste and sound, we explore how food reflects who we are and how we grow.

Grace’s Southern-Style Northern Dumplings

A fusion recipe that blends the warmth of home with a touch of southern freshness.

Ingredients

500 g minced pork (half fat, half lean)
4–5 dried shiitake mushrooms, finely chopped
½ cup sweet corn kernels
¼ cup chopped water chestnuts
1 tbsp chicken powder
1 tbsp light soy sauce
1 tbsp salt
1 tbsp sesame oil
Green onion and ginger (crushed)
4–5 Sichuan peppercorns
Some mineral water and ice cubes
Ready-made dumpling wrappers

Steps

Make onion-ginger water by mixing crushed green onion, ginger, peppercorns, and mineral water.

Keep the pork cold. Add the onion-ginger water in three rounds, stirring clockwise and adding ice cubes to keep the mixture around 20 °C.

When the pork turns sticky and springy, mix in mushrooms, corn, black fungus, and water chestnuts.

Add chicken powder, soy sauce, salt, and sesame oil. Mix well — this is Grace’s signature filling.

Simply fold each dumpling in half and press the edges together to seal.

Place the fresh dumplings into cold water. Bring to a boil, then simmer for 8 minutes.

Turn off the heat, cover with a lid, and let sit for 2 minutes.
