Dr. Gidon Eshel, Research Professor of Environmental Physics at Bard College, shares expert insights from his newly published book, "Planetary Eating: The Hidden Links between Your Plate and Our Cosmic Neighborhood," exploring how dietary choices shape both personal health and planetary well-being.

Human diets exert an outsized influence on planetary health because agriculture dominates global land use, drives much of the world’s water pollution, and is a major source of greenhouse gas emissions. Dr. Gidon Eshel’s work shows that shifting from beef-heavy diets to plant-based foods such as lentils, chickpeas, and grains can reduce resource use by an order of magnitude, freeing land, water, and energy while also lowering emissions and improving health outcomes. He challenges popular myths that grass-fed beef is climate-friendly and that “local” automatically means sustainable, arguing that farm-level efficiency and overall production methods matter far more than distance travelled. His research also highlights nuanced trade-offs such as organic farming’s benefits for reducing chemical exposure versus its higher land demand and calls for integrated agricultural systems that blend the efficiency of industrial farming with the ecological care of small-scale models to support both human well-being and long-term planetary integrity.
