Fraise, abricot, cassis ou encore coing : la confiture a mille visages, mais toujours la même recette — celle du mariage heureux entre des fruits et du sucre, aidé par la magie de la pectine.
Ce produit convivial trouve sa place sur la table des long petits déjeuners, entre les tartines et le beurre, mais aussi au moment du dessert, pour qui veut agrémenter son yaourt nature d’une touche de sucré, ou avec le fromage, pour adoucir un morceau de brebis un peu corsé.
Chaque pot de confiture maison renferme bien plus qu’une matière sucrée à attraper à la cuillère — à l’intérieur, il y a une histoire unique, celle de la sélection des fruits, du temps de travail, d’une attention portée à chaque étape… Un charme authentique qui s’explique également par le fait que refaire deux fois la même confiture est quasi impossible.
Derrière la silhouette de ces bocaux en verre se trouvent également plusieurs fils à tirer : celui du partage car on fait rarement de la confiture juste pour soi-même ; celui de la poésie car la confiture permet en plein cœur de l’hiver de manger des fruits d’été à la manière d’une capsule temporelle ; celui de la portée économique car faire des confitures soi-même, c’est perpétuer de vieux savoirs domestiques pratiques pour remplir ses étagères sans avoir recours à l’industrie agroalimentaire.
Dans cet épisode, Émilie Laystary donne la parole à Béatrice Bellon, qui fait des confitures avec sa structure, les Gaillardises de l’Ubaye. Béatrice a le statut de maître confiturier. Depuis 2014, son parcours est jalonné de récompenses. Cette année, elle est devenue championne du monde de confiture dans la catégorie traditionnelle. Au micro de Bouffons, elle livre de précieux conseils pour ne plus jamais rater une confiture.

Astuces pour une bonne confiture : 

Chaque fruit a sa propre cuisson et son propre temps de préparation. De préférence, utilisez des fruits frais et non des fruits abîmés ou pourris. Le mieux est d’avoir un mélange de trois types de maturité pour les fruits : des fruits pas matures, des fruits à maturité normale et des fruits très matures. Ces trois degrés de maturité vous donneront la meilleure consistance pour votre confiture. 
En fonction des saisons, les fruits ne vont pas cuire de la même façon. Pendant l’été, le sirop du fruit va se faire trop rapidement, donc la période idéale est l’hiver. Si vous laissez trop longtemps sur le feu, le fruit va fermenter et ce ne sera plus une confiture. 
Pour réussir votre confiture, faites la bouillir une première fois afin d’arrêter la fermentation dès que le fruit a relâché tout son sirop et son sucre. Puis, laissez bouillir jusqu’à avoir une mousse qui se forme. Éteignez et filmez avec un film plastique le contenant. Réservez-le pendant 24h dans un endroit à température ambiante afin que le sirop puisse réintégrer le fruit. 
Répétez l’opération deux fois : bouillir, couvrir et réserver dans un endroit à température ambiante.
