Wurstsalat ist ein mit Essig, Öl und Zwiebeln sauer angemachter Salat aus Wurst, meist Brühwurst wie Lyoner, Stadtwurst, Regensburger oder Extrawurst. Er ist eine traditionelle Zwischenmahlzeit in Süddeutschland, dem Elsass, der Schweiz (mit Cervelat) und in Österreich.
