Few things bring man closer together than having a drink. What was the most impactful exchange between the old and the new worlds? The mixing and substitutions done by Spanish settlers out of necessity, specifically the adoption of pulque. During the Spanish colonization of South America throughout the 16th century, European settlers would avidly avoid the indigenous cuisines believing it to be not only to be worse than theirs but corrupted. These settlers had little back home and came to the new world to seek their riches there, however, those who stayed poor were stuck having to pay incredibly high prices for imported European goods. One adoption they made out of necessity was pulque as the drink of choice when wine was too expensive. Pulque, a liquor made by fermenting agave sap, became a hit among the Spanish settlers. Having so much influence as to being blamed as the cause of a riot.
