Realised the Mario Kart OST actually has three different main menu themes, and all being at 174 bpm they can be stitched into something resembling a track. All rights belong to Nintendo.

Bubblaine (Seaside Kingdom) - Super Mario Odyssey Soundtrack

This is a mashup of the menu music between Mario Kart 6 (Wii) and Mario Kart 7. Both have a similar beat and structure, with the pitch being the only difference. Despite that, syncing the pitch is only partially possible, and this is the closest, that I have found, that the two will sound in unison. Enjoy.
