Sans sorta takes an original role, it's complicated. You first meet him at Grillby's (which is still around this time, thank the gods!) where he's drinking the pain away, and this replaces the BGM for Grillby's. He doesn't even notice the new human initially, and he's not much of a threat at all. Truly the life of the party.

It says here FURTHERFELL is a SERIES of AUs, what are its variations?

FURTHERFELL has several variations to represent the different neutral outcomes which UNDERTALE (and therefore UNDERFELL) can have. We do not have all of the hypothetical variations possible out as branches, since that would take too much work, so we only have Incomplete Pacifist (Rethroned) King Mettaton (Drama! Romance! Bloodshed!), King Papyrus (Vive La Révolution), and.. That one doesn't exist. Also there's a self insert.

How do neutral endings work? Are you using the Trust, Betrayal, and Closure system? 
FURTHERFELL does follow the Canonfell system of neutral endings, which is explained at https://underfell.tumblr.com/post/651913101407584256/these-are-just-thoughts-and-im-spewing-ideas-i. Hare's run doesn't follow the traditional Trust, Closure and Betrayal system from UNDERFELL entirely. Hare is capable of killing monsters on their own.
Frisk's actions did follow the Trust, Closure and Betrayal system. But with a twist we won't reveal yet.
