Remember Jim Chialtas from Episode 75? If you haven't heard it yet, I recommend you check it out! Today, we welcome back Jim to dive a little deeper into Functional Blood Chemistry, as well as review some of my personal blood and saliva tests that may have revealed something I would've never expected.

After my last podcast with Jim, I had a consultation with him and mentioned that one of my biggest physical set-backs was EXTREME bloating combined with eczema. 

I don't like to abuse the word "suffering", but I'm telling you; most days I would look like I was 4 months pregnant, and I would scratch my legs so bad in my sleep, I'd wake up with wounds. I don't eat meat, don't eat dairy, I've recently cut out gluten and I eat mostly whole foods. I was really confused as to what it could be. 

The blood test showed I was low in iron, but there were other results that I didn't quite understand. The funny thing is, I track my macro and micronutrients, and get PLENTY of iron in my diet! So, what's the underlying issue?

My first thought was that I may have developed Celiac, which could be preventing my intestines from absorbing the iron. So, I started eliminating gluten. But, it seems I may have been wrong!

Renee King-Sonnen went from rancher's wife to vegan highly because of a special calf she calls Rowdy Girl. Renee's husband Tommy wanted her to care for the calf, hoping that she would become a better Rancher's Wife.

Renee quickly realized the cows were sentient beings as she watched the mothers and babies cry for each other when they were separated. She bought Rowdy Girl for $300, which gave her the official title as a "Rancher", having no idea that this was to be the beginning of her journey towards veganism.

Today, Renee and Tommy's ranch that was once called "Sonnen Ranch" is a sanctuary named after her calf, Rowdy Girl. Rowdy Girl Sanctuary is recognized as a 501C-3 (Non-Profit) and houses 107 animals, 62 of which are cows!

Teary-Eyed Pride

Alondra Ruiz is a successful San Diego Real Estate Agent and the co-owner of Natural Delights in East County, San Diego. But, Alondra's life hasn't always been so healthy. Episode 176 - America's Algae Gal

Jim Greenbaum has been interested in resolving injustices that exist in our society since he was a child in Louisiana. When he was a young adult, he had the idea of combating some of these issues legally, by attending law school. At the last minute, Jim decided to switch to a business major, with the idea that he could make a larger impact that way.

Thankfully, Jim was far from wrong. After a few "practice" attempts at business, Jim was able to reach a goal to help support organizations dealing with human rights, and later added a focus on animal rights.

Today, Jim has successfully supported numerous organizations, including Animal Equality, Earthling Ed, The Humane League, The Physician's Committee for Responsible Medicine, as well as documentaries such as Game Changers, What the Health and Cowspiracy (to name a few)!

Episode 227 - Turning Over a New Leaf

Janet Safiuallah has been an working out most of her life. She has competed in bikini competitions and, like many of us at one time, didn't think she could build muscle on a vegan diet. A friend of hers in the gym, who was working out just as hard as Janet mentioned she was vegan, which sparked Janet's interest in the lifestyle. Soon after, she saw What the Health, and decided to give it a try.

Jane Velez-Mitchell has been vegan longer than some of you have been alive; she was never served meat as a child, despite her Puerto Rican upbringing. Later in life, Jane went to NYU and graduated with a degree in Broadcast Journalism, which later led her to work with K-CAL TV, CNN, Warner Bros. and many more. Episode 229 - Jane Unchained

Alexander Bvck is a sober animal rights activist, triathlete and musician, but things weren't always this way. Alex grew up in Northern Los Angeles and did a lot of acting as a kid which allowed him to live a much different life than most children his age. Looking back on his life, he realized that he may have developed some personality traits during this time that may have influenced some of his actions later in life.

Alex was exposed to veganism and vegetarianism in the punk scene as a teen, and as 16 years old, decided to give up all meat. At one point in his early adulthood, he went back to eating animals, and when he came to a point where he wanted to stop, he dealt with the same sort of addiction and peer pressure associated with his consumption of alcohol or other substances.

After watching Okja, Alex went vegetarian over night.

Episode 230 - Bad Jesus

Yi Ping Lai grew up in China and explains the connection between the over-population of homeless dogs and the dog meat trade. She tells her heartwarming story of how she grew up viewing dogs as a threat in China, and how she overcame her fear when she moved to America.

Today, Yi Ping is vegan and the founder of World of Angels Foundation; the US-based non-profit dedicated to alleviating the suffering of homeless companion animals in China by funding existing partner sanctuaries, establishing new sanctuaries, and ending the cruelty of the meat trade in China. Now, with the recent outbreak of the Coronavirus, or COVID-19, approximately 50,000 companion animals have been stranded in homes with no food or water due to travel restrictions and quarantine of their "owners". Yi is working hard to provide food and water for these animals, or place them in forever homes before it's too late.
