Autechre - Mix for Neuvoids

MERLUZZO IN PADELLA CON POMODORI E OLIVE

per una o due persone

- 300g di merluzzo fresco (450 se congelato)
- 5/6 pomodori pachino
- 2 cucchiai di olive nere o taggiasche
- uno spicchio d'aglio
- doppio concentrato di pomodoro
- 2 cucchiaini di farina o amido di mais
- uno spicchio d'aglio
- olio e sale q.b.

1. Schiaccia play
2. sciacqua il merluzzo sotto acqua corrente e asciugalo bene con carta assorbente.
3. in una teglia antiaderente capiente metti due o tre cucchiai d'olio e lo spicchio d'aglio, accendi la fiamma e fai rosolare
4. abbassala fiamma fuoco medio, taglia il merluzzo in pezzi di 5/7cm e aggiungilo in padella
5. lascia rosolare il pesce da un lato fino a che non si colora, poi giralo dall'altro lato
6. nel mentre, taglia i pomodorini a dadini
7. gira di nuovo il merluzzo, aggiungi il sale e i pomodorini a cubetti, abbassa la fiamma e copri tutto e lascia cuocere per 8-10 minuti
8. mentre il pesce cuoce, taglia a rondelline le olive e aggiungile in padella, lascia cuocere col coperchio.
9. spremi un po' di concentrato di pomodoro in una tazzina, aggiungi acqua e fai sciogliere, poi aggiungi la farina o l'amido di mais, mescolando fino a far amalgamare il tutto
10. versa il contenuto della tazzina nella padella, aggiusta di sale e lascia cuocere per altri cinque minuti
11. alza il coperchio e fai ridurre il liquido a fuoco basso fino alla consistenza di una salsina
12. lascia intepidire e servi
